If soaked mushrooms are left at room temperature for several hours, stored overnight, or refrigerated after soaking for an extended period, they may become contaminated with harmful bacteria and molds. Some microorganisms can produce dangerous toxins that are not destroyed by cooking and may damage the liver, brain, and other organs.
